Very quick and easy! Delicious way to cook veggies. I didn’t have thyme or rosemary, just used salt, pepper and garlic and it was still very tasty. Will try it again with the exact ingredients.

Perfect! Incredibly simple. The only ingredient I did not have was Thyme, but I used herbs de Provence. Will keep this one for a easy tasty side dish.

This was pretty good but it was just lacking something. Also, I cooked everything even longer than the listed cook time and none of the veggies really crisped at all. Maybe I used too much oil but the veggies were just a little meh. I’ll try again with less oil, more garlic, and maybe I’ll broil the veggies just for a minute or two once they’re soft.

simple, but delicious. used turnips instead of potatoes cuz we had a bunch we needed to use up. it was great. toddler approved.

I made this tonight and it was a HUGE success. I used whole carrots instead of baby carrots (I still chopped and peeled them), added sweet potatoes, onions, a red bell pepper, and walnuts and pecans with brown sugar. It was DELICIOUS!!!!! My dad described it as “the best thing you’ve ever made”, so I’ll definitely be cooking this again.

This was super easy to make and modify for one person. The flavor was great! I think next time, I will use the green beans, as I only did the carrots and potatoes. But I loved the way that the carrots turned out. I paired this with just a simple chicken breast with italian seasoning.

This was a great recipe! Opted out of the olive oil but they still came out great with butter. Definitely a house favorite.

I used the amount of olive oil told to use and my roasted veggies turned out a bit dry. Other than that, delicious.

So easy and delicious! We didn't have carrots, and in the end we didn't prefer the green beans, so we'll probably just do potatoes next time.

Just great! Added some chopped onion, as recommended as a tip at the end of the recipe. Definitely do it again.
