Very easy to prepare with lots of flavour. I have added chunks of mushroom to the mix which blend very nicely with the other vegetables.

Very tasty! I use a gas oven and the potatoes were a little undercooked. Next time I would cook them longer than the recipe suggests. Flavors were great!
