Ingredients

  • 1/4 cucumber (thinly sliced)
  • 1 tablespoon yogurt
  • 1 teaspoon lemon juice
  • 1 teaspoon sunflower oil
  • 1 chicken breast
  • 2 garlic cloves (finely diced)
  • 3 tablespoons chopped parsley (plus a sprig to garnish)

Directions

  1. Mix the cucumber, yogurt and lemon juice together and season.
  2. Heat the oil in a frying pan. Season the chicken then fry for 8-9 mins, turning. Add the garlic and parsley to the pan and continue to cook for 2-3 mins, until the chicken is cooked through. Arrange the salad and chicken on a plate and serve garnished with parsley.
