Ingredients

  • 2 boneless skinless chicken breasts
  • salt
  • ground black pepper
  • 1 tablespoon olive oil
  • 20 garlic cloves
  • 1/4 cup tequila
  • 1 cup chicken stock

Directions

  1. 1Coat both sides of each chicken breast with salt and black pepper.
  2. 2Place a large pot on the stove on medium-low heat. Add the olive oil and grill both sides of each chicken breast until the chicken is completely cooked.
  3. 3Set the chicken aside and cook the garlic cloves in the grease that was left behind in the pot. Make sure to cook the garlic until you see that each clove is somewhat brown.
  4. 4Add the tequila and cook for 1 minute.
  5. 5Add the chicken stock and bring to a boil. Lower the heat and remove 4 garlic cloves from the pot.
  6. 6Use an immersion blender and puree the garlic cloves in the stock. Add the chicken and remaining garlic cloves to the and cook for 15 minutes on low heat.
  7. 7Serve the chicken along with a salad and a loaf of whole wheat bread.
