  • 6 tablespoons olive oil
  • 1 onions (medium, chopped)
  • 2 green bell pepper (medium, and/or red bell peppers, thinly sliced)
  • 2 cups fresh mushrooms (sliced)
  • 2 cloves garlic (finely chopped)
  • 2 zucchini (medium, thinly sliced)
  • 1 eggplant (medium, peeled and cubed)
  • 3 tablespoons fresh basil leaves (finely chopped, or 1 tsp dried basil leaves, crushed)
  • 1 jar Ragu® Chunky Pasta Sauce (1 lb. 8 oz.)
  • 1/2 cup grated Parmesan cheese

    Directions

    1. In 12-inch skillet, heat 2 tablespoons olive oil over medium heat and cook onion, green peppers, mushrooms and garlic, stirring occasionally, 10 minutes or until vegetables are tender. Remove vegetables and set aside.
    2. In same skillet, heat remaining 4 tablespoons oil and cook zucchini and eggplant, stirring occasionally, 5 minutes or until tender. Return vegetables to skillet. Stir in basil and Pasta Sauce. Simmer, stirring occasionally, 5 minutes or until heated through. Sprinkle with cheese.
