This soup was a little thin for my taste so i added more tomatoes and added vegetable stock instead of water for more flavor.

It came out sooooo good, I added more tomatoes, finely chopped a small red beet, florets of Cauliflower, and some butter beans. Perfectly wholesome soup.

It tastes good, but doesn't look like the picture. I added a can of tomato sauce and nearly doubled the tomato. If not, it's like a brownish vegetable soup.
