Description

Garbanzo beans are great for more than just being pureed into hummus. In this recipe, they are one of the main stars along with monkfish and shrimp for a filling and protein-packed meal. A touch of tomato sauce, an onion, and a sprinkle of oregano bring a ton of flavor to the dish and accent the main ingredients beautifully. Try this dish served over rice or with a pile of steamed vegetables for a balanced and filling meal.

Ingredients

2 tablespoons vegetable oil
200 grams jumbo shrimp
1 onions
200 grams monkfish
salt
ground black pepper
15 ounces garbanzo beans
2 tablespoons tomato sauce
fresh oregano

Directions

1Add the oil to a skillet on medium heat. Add the shrimp peels and saute for 2 minutes. Remove the peels from the skillet.
2Add the onions and saute for up to 8 minutes.
3Add the fish, along with a pinch of salt and ground black pepper. Saute for 2 minutes.
4Add the garbanzo beans and cook for 5 minutes.
5Add tomato sauce and a sprinkling of oregano. Simmer for a few minutes and serve on rice.
