Ingredients

  • 5 ounces tuna packed in olive oil (I love Genova Tonno tuna in olive oil)
  • 1 can garbanzo beans (also called chickpeas)
  • 1 red bell pepper (chopped)
  • 1/4 cup red onion (chopped, or use sliced green onion if you're not a raw onion fan)
  • 1 cup chopped parsley (I prefer curly parsley for this)
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lemon juice (I used my fresh-frozen lemon juice)
  • salt
  • pepper

I loved this recipe! I didn't have the tuna with olive oil only with the brine. Followed the recipe but I couldn't help myself I add some goat cheese and tomato. It was amazing. I bet it would be better with the tuna with olive oil. It was still delicious and will definitely make it again. Thank u for the recipe
