Galicia is in the northwest part of Spain and is very close to Portugal. The food traditionally made here has a lot of seafood. This Galician-style Octopus recipe is a traditional recipe of this area. It takes about an hour to make is is only 90 calories. While octopus is an acquired taste, this recipe is guaranteed to please the palate. Ingredients include water, coarse salt, octopus, coarsely chopped potatoes, extra-virgin olive oil, and paprika.

Ingredients

  • water
  • coarse salt
  • 1 octopuses
  • 1 potatoes (large, peeled and coarsely chopped)
  • extra-virgin olive oil
  • paprika

Directions

  1. 1In a large pot, heat water with salt.
  2. 2Wash the octopus and remove the beak.
  3. 3Once the water is boiling, place the octopus in the pot, cover it, and let it cook for 45 minutes.
  4. 4In a saucepan, add cold water, salt, and the potato. Cook until the potato has softened.
  5. 5Remove the octopus from the pot, cut into medium pieces, and plate along with the potato. Drizzle with olive oil and sprinkle coarse salt and paprika on top.
