Ingredients

  • 150 grams fusilli (or any short pasta)
  • 1 tablespoon olive oil
  • 1/2 red onion (sliced into thin wedges)
  • 6 sun dried tomatoes (chopped)
  • 1 tablespoon balsamic vinegar
  • salt
  • ground black pepper
  • 2 tablespoons fresh parsley (chopped)
  • 1 tablespoon fresh basil (chopped)
  • 100 grams feta cheese (or goat cheese)

Directions

  1. Cook the pasta according to the instructions on the package, al dente.
  2. When the pasta is almost done, heat the olive oil in another saucepan. Add the onion and cook over low heat for 5 to 8 minutes until light golden brown.
  3. Add the tomatoes, balsamic vinegar, and the cooked pasta. Season with salt and pepper to taste. Remove from the stove and let it cool.
  4. Add the parsley, basil, and cheese. Mix carefully and serve.

This is a surprisingly healthy and flavorful dish. I re-hydrated the sun dried tomatoes for about an hour first. Then, I patted them dry and drizzled them lightly with olive oil before I put them in with the feta cheese to pour over the fusilli.
