Fruit Punch with Breadsticks

Ingredients

  • 250 grams flour
  • 1 teaspoon sugar
  • 7 grams dried yeast
  • 1/2 teaspoon salt
  • 3 tablespoons olive oil (+ 1 tsp for brushing)
  • 2 kiwi fruit (peeled and sliced)
  • 200 grams cherries (stoned)
  • 2 nectarines (stoned removed and cut into chunks)
  • 500 grams watermelon (cut into thick slices)
  • 250 milliliters cherry juice
  • 250 milliliters apple juice
  • 1 lemon (juiced)
  • 0.75 liters mineral water

Directions

  1. To make the pastry, mix the flour with the yeast, sugar and salt in a bowl. Add 3 tablespoons of the oil and 1/2 cup of lukewarm water, and mix in a food processor with a dough hook. Next, knead the mixture with your hands until the dough is smooth. Cover the bowl and put in a warm place for about 45 minutes.
  2. Put the prepared fruit in a large bowl. Pour over the juices and refrigerate.
  3. To make the breadsticks, take the dough out of the bowl and knead, then divide into 8 pieces. Roll each piece into a long, thin strip of about 1 foot long, then wrap each one around a wooden skewer and refrigerate for about 15 mins.
  4. Brush the pastry skewers with a little olive oil, then put them under the broiler on medium heat for 12-15 mins, turning. Meanwhile, add the mineral water to the fruit and juice. Serve the fruit salad with a breadstick on the side
