  • 6 ounces candied cherries (halved)
  • 3 1/2 ounces mixed dried fruit
  • 3/4 cup light brown sugar
  • 1/2 cup butter (cut into pieces)
  • 1 2/3 cups self rising flour
  • 2 eggs (beaten)

Directions

  1. Preheat oven to 325°F. Lightly grease a 9x5 inch loaf pan. Line base with parchment paper.
  2. Sauté candied cherries, dried fruit, sugar and butter, stirring, until sugar dissolves and butter melts. Bring to a boil then remove from heat and let cool slightly. Add flour and eggs and mix until just combined. Transfer to prepared pan and bake for 1 hour 15 mins, until a skewer inserted in the center comes out clean. Turn out onto a wire rack and let cool completely.
