  • 2 cups green olives (stuffed with anchovies)
  • flour (to dust)
  • 2 egg whites (beaten until frothy)
  • 1 cup dry breadcrumbs (fine)
  • olive oil (for frying)

    Directions

    1. Pat olives dry with paper towels. Dust with flour, brushing off excess.
    2. Dip olives into beaten egg whites, then toss in breadcrumbs until completely coated.
    3. Heat 3/4 inch olive oil in a medium saucepan on high heat. Fry olives, in batches, for 1-2 mins, until just golden. Remove using a wire skimmer and drain on paper towels. Serve immediately.
