This Portuguese-style fried squid is great for an appetizer or snack. A marinade of garlic, bay leaf, and lemon add a ton of flavor. A simple breading of corn meal adds a nice crunch, which is the perfect combination with the tender squid. Served on top of tomato rice, this makes for a great meal. If you want something a little bit lighter, try the squid on top of a lightly dressed salad.

Ingredients

  • 1 squid (pack, in strips)
  • 1 garlic cloves
  • 4 bay leaves
  • 1 lemon juice
  • salt
  • ground black pepper
  • corn flour (for breading)
  • oil (for frying)

Directions

  1. Thaw the squid in its package, in the refrigerator.
  2. Cut the squid into 1 centimeter wide strips.
  3. Place the squid strips in a bowl or tray. Drizzle with lemon juice, add garlic, bay leaf, and season with salt and pepper. Cover with plastic wrap, and marinate in the refrigerator for one hour.
  4. Remove the strips from the marinade, and wipe them with cornmeal.
  5. Fry in hot oil until brown. Place them on a tray lined with paper towels to remove excess oil.
  6. Serve with tomato rice.

These muffins are simple to whip up. They are hearty and a yummy way to eat asparagus. I served them right out of the oven. I will make these again.
