Description
This Portuguese-style fried squid is great for an appetizer or snack. A marinade of garlic, bay leaf, and lemon add a ton of flavor. A simple breading of corn meal adds a nice crunch, which is the perfect combination with the tender squid. Served on top of tomato rice, this makes for a great meal. If you want something a little bit lighter, try the squid on top of a lightly dressed salad.
Ingredients
- 1 squid (pack, in strips)
- 1 garlic cloves
- 4 bay leaves
- 1 lemon juice
- salt
- ground black pepper
- corn flour (for breading)
- oil (for frying)
Directions
- 1Thaw the squid in its package, in the refrigerator.
- 2Cut the squid into 1 centimeter wide strips.
- 3Place the squid strips in a bowl or tray. Drizzle with lemon juice, add garlic, bay leaf, and season with salt and pepper. Cover with plastic wrap, and marinate in the refrigerator for one hour.
- 4Remove the strips from the marinade, and wipe them with cornmeal.
- 5Fry in hot oil until brown. Place them on a tray lined with paper towels to remove excess oil.
- 6Serve with tomato rice.
