All you need is a mug, a microwave and a handful of ingredients for this delicious, no-fry fried rice recipes.

- 3/4 cup frozen mixed vegetables
- 3/4 cup cooked brown rice
- 4 tsp. reduced sodium soy sauce
- 1/8 tsp. ground ginger
- 1/8 tsp. garlic powder
- 1 eggs

Directions
- Pour the veggies into a large mug. Microwave for 60 seconds until defrosted.
- Add the ginger, garlic, and sauce to the mug. Stir to combine.
- Add the brown rice and egg to the mug, and stir thoroughly until all the ingredients are well-combined.
- Microwave the mug for another 90 seconds until the egg has coagulated. Remove the mug from the microwave, stir, and serve.

I used frozen green chickpeas, peas and corn. I added fresh garlic and leftover cooked rice with fried bacon, onion and dill I’d made to stuff Ukrainian cabbage rolls. Adjusted soy sauce and ginger to taste. Veggies needed another minute to defrost and egg needed an extra minute to coagulate. A good basic recipe which can be customized to what you have on hand.

Quick lunch or in between running around meal . Since you use already pre cooked rice it’s literally done in a few minutes . The only thing I had to change is the soy sauce amount - used half soy sauce and half no salt chicken broth since I have to watch my sodium . Otherwise there is always room for adding some pork or chicken leftovers - aka pork fried rice . Thanks for posting

This was a last minute lunch for my daughter to take to school A little bland, but great for a quick recipe I had cooked jasmine rice so that's what I used. My veggies were frozen broccoli, cauliflower and peas The egg never got to the consistency you expect of scrambled or fried eggs and it took about twice as much microwave time as noted. Next time, I'll try with a little oil added. Would be great with some sautéed onions and carrots added
