  • 1 cup quinoa (uncooked)
  • 2 tablespoons canola oil (divided)
  • 3/4 cup egg whites
  • 1 1/2 cups frozen mixed vegetables (thawed)
  • 1/3 cup green onions (chopped)
  • 3 tablespoons low sodium soy sauce
  • 1/2 teaspoon Sriracha (hot chile sauce, optional)

    Directions

    1. Cook quinoa according to package directions; cook 10 mins.
    2. Meanwhile, cook eggs in 1 TBS hot oil in large nonstick skillet over medium-high heat, stirring often, 2 minutes or just until set. Remove from the skillet.
    3. Add remaining 1 TBS oil to skillet; heat 1 minute. Cook vegetables, quinoa and green onion in hot oil, stirring often, 4-5 minutes or until vegetables are tender and quinoa is slightly browned.

    The original recipe calls for 3 eggs, beaten. I subbed 3/4 cups egg whites (1/4 cup = 1 egg). I also subbed olive oil for the canola. I didn't have any green onions on hand so left those out.
