Ingredients

  • 1 eggplant
  • 3 yellow onions
  • flour
  • vegetable oil
  • salt

Directions

  1. Wash the eggplants, dry them and cut them into strips.
  2. Cut the onions into rounds.
  3. Add the vegetables to a large bowl and add the flour. Toss well, making sure to coat the vegetables completely.
  4. Heat the oil in the fryer or deep skillet. Fry the vegetables until golden.
  5. Place the vegetables on paper towels to absorb the excess oil.
  6. Season with salt before serving.

These taste so good together! I also made a tomato based marinara for dipping. I will try sprinkling a little Parmesan over them after they pop out of the fryer next time I make these.
