Fried Fish with Bacon Mashed Potatoes

  • 2 1/4 pounds potatoes (peeled and chopped)
  • 1 3/4 pounds white fish (firm, with skin on)
  • 2 tablespoons all-purpose flour
  • 3 tablespoons butter
  • 4 strips bacon (diced)
  • 1 onion (peeled and finely diced)
  • 6 sprigs thyme (chopped)
  • 1 head lettuce (cut into strips)
  • 2 tablespoons olive oil
  • 1 pinch white pepper
  • 1 cup milk
  • nutmeg (freshly grated, to taste)

    Directions

    1. Cook potatoes in boiling salted water for 20 mins. Meanwhile, cut fish into pieces, season and dredge in flour.
    2. Heat butter in a frying pan and sauté bacon. Add onion and thyme and sauté briefly. Stir in lettuce then remove from heat. Heat oil in a large frying pan and fry fish skin side down, until golden brown. Turn and briefly fry other side.
    3. Drain potatoes, and mash to a purée with milk. Fold in bacon mixture. Season with salt and nutmeg. Drain fish on paper towels. Serve with the mashed potatoes.
