For those times when you are craving wings but aren't in the mood to go to a sports bar (or other establishments), you can prepare them yourself in your own kitchen. The secret to their success lies in marinating, to boost the flavor and tenderize the meat, and also in the particular seasonings used, such as the fresh cilantro and thyme, chili sauce, and garlic in this recipe. These are dusted with flour and fried, just like original versions, and served with a pan gravy.

Ingredients

  • salt (to taste)
  • ground black pepper (to taste)
  • 1 tablespoon fresh coriander (chopped)
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon sweet chili sauce
  • 2 cloves minced garlic
  • 1 lemon (zest and juice)
  • corn flour (or wheat to taste)
  • 3 tablespoons olive oil
  • 1 tablespoon wheat flour
  • 200 milliliters milk
  • salt (to taste)

Directions

  1. For the wings: Season the wings with salt and pepper to taste.
  2. Add the coriander, thyme, sweet chili sauce, garlic, lemon zest and lemon juice and mix well.
  3. Marinate the wings in the sauce.
  4. Drain the wings and sprinkle with flour. Heat olive oil in a large skillet and fry the wings over medium heat.
  5. Use a lid or aluminum foil to prevent the olive oil from popping. When wings are cooked remove from heat and drain on paper towels.
  6. For the sauce: Place the remaining flour in the skillet and whisk to combine with the pan juices. Add the milk and stir until thickened. Season to taste.
  7. Serve the wings with the sauce and basmati saffron rice.
