  • 2 cups salad leaves (mixed, e.g. spinach, chard, kale etc)
  • 6 cherry tomatoes (quartered)
  • 1/2 cup sliced cucumber (sliced into semi circles)
  • 12 snow peas (sliced diagonally)
  • 1/2 carrot (medium sized, peeled and thinly sliced)
  • 8 sprigs coriander (roughly chopped)
  • 1 tablespoon peanuts (roughly chopped)
  • 8 sprigs coriander (finely chopped)
  • 1 lime (juiced, approximately 2 tbsp of lime juice)
  • 1 teaspoon avocado oil (or extra virgin olive oil)
  • 2 teaspoons fish sauce (/vegan fish sauce)

  • 1 clove garlic (crushed)
