Ingredients

  • 400 grams strawberries
  • 300 grams water
  • 2 mint leaves (ground)
  • 4 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1 lemon zest (and juice)
  • 2 clove
  • 1 sprig mint (crushed)
  • 1 teaspoon corn starch
  • 2 tablespoons blackcurrant syrup (or grenadine)
  • greek yogurt (to taste)

Directions

  1. 1Wash the strawberries and set a few aside as a garnish.
  2. 2Remove the stems from the rest and cut them into pieces. Set them aside.
  3. 3Bring the water to a boil with the powdered sugar, vanilla extract, strawberries, lemon peel, lemon zest, and cloves.
  4. 4Remove the mix from the heat, remove the lemon peel and cloves, and add the crushed mint.
  5. 5While still hot, stir in the cornstarch and blackcurrant syrup. Bring the mix back to a boil.
  6. 6Pour the soup into bowls and let it cool.
  7. 7Decorate with strawberries and serve with greek yogurt.
