For a vegetarian alternative, you can use super firm or baked tofu in place of the shrimp. Rice paper rounds can be found at any Asian grocer, or in some Asian sections of larger grocery stores.
- 16 cooked shrimp (medium-size)
- 6 cups Soy Vay® Wasabi Teriyaki
- 16 rice paper (8-inch, plus more in case some tear)
- 8 leaves butter lettuce (or 4 large, torn in half)
- 1/4 cup fresh basil leaves
- 1/4 cup fresh mint leaves
- 1/2 cucumber (peeled, seeded and cut into matchsticks)
