  • 200 grams meat (salmon)
  • 20 grams granny smith apple
  • 1/4 cucumber
  • 2 stalks chives (chopped)
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • fleur de sel (hand-harvested sea salt)
  • lemon slices (to serve)

    Directions

    1. Cut the salmon flesh into small cubes 1 centimeter in size. Put the cubes in the refrigerator.
    2. Peel the apple and cucumber and dice them into small cubes.
    3. In a bowl, mix the diced apple, cucumber, salmon, chives, olive oil, soy sauce and rice vinegar. Season with salt.
    4. Serve immediately with lemon slices and toasted bread.
