Ingredients

200 grams meat (salmon)
20 grams granny smith apples
1/4 cucumber
2 stalks chives (chopped)
2 tablespoons olive oil
2 tablespoons soy sauce
2 tablespoons rice vinegar
fleur de sel (hand-harvested sea salt)
lemon slices (to serve)
bread (Toasted, to serve)

Directions

1Cut the salmon flesh into small cubes 1 centimeter in size. Put the cubes in the refrigerator.
2Peel the apple and cucumber and dice them into small cubes.
3In a bowl, mix the diced apple, cucumber, salmon, chives, olive oil, soy sauce and rice vinegar. Season with salt.
4Serve immediately with lemon slices and toasted bread.
