This super simple salad would make a delightful topping for crostini or bruschetta, or for enjoying on its own as a refreshing starter course for a summer supper, preferably enjoyed al fresco. It makes excellent use of peak of season tomatoes, which are the only kinds to use, as their flavor will shine through. Parmesan, fresh herbs, olive oil, and fresh lemon juice are the only other ingredients (besides salt and pepper).
- 4 tomatoes (ripe)
- parmesan cheese (shavings)
- olive oil
- lemon juice
- Chop the tomatoes into small pieces. Season with salt and pepper to taste.
- Sprinkle the Parmesan shavings, chives, and parsley over the tomatoes. Drizzle with olive oil and lemon juice.
- Serve immediately.
