Description

Fresh and vibrant flavors of the Orient combine with the down-home spices from Italy in this light and appetizing salad. Thai basil and crushed peanuts brighten up the subtleness of steamed rice while coriander and green onions tone down the tangy notes, perfectly balancing the sweet and the savory. Enjoy bursts of pungent fruit and herbs mellowed by the absorbency of rice. Satisfy your hunger without feeling overly full. Asian-Italian fusion cuisine at its best.

Ingredients

  • 300 grams jasmine rice
  • 60 milliliters olive oil
  • 1 lemon juice (organic, and zest)
  • salt
  • ground black pepper
  • 1 sprig thai basil
  • 1 sprig fresh mint
  • 1 sprig coriander
  • 1 stalk green onions (or fresh onion)
  • 2 mango
  • 75 grams peanuts
  • 50 grams coconut (dried)

Directions

  1. Cook the rice in salted water. Drain, and set aside.
  2. In a salad bowl, pour the olive oil, lemon zest, lemon juice, salt, and pepper. Stir.
  3. Chop basil, mint, coriander, and onion stalk, add to the bowl, but keep a few leaves for decoration.
  4. Cut the mango into small pieces, add to the bowl.
  5. Crush the peanuts, add to the bowl.
  6. Lightly brown the coconut in a skillet, add to the salad but keep 1 tablespoon for decoration.
  7. Add the rice, mix gently, check the seasoning, garnish with the remaining dried coconut and herbs.
  8. Refrigerate for at least 2 hours.
