Description

Spicy spring radishes are the perfect foil for tangy European-style cultured butter. These simple toasts are a great way to highlight fresh radishes from the market (or your garden).

  • 1 bunch radishes (any variety, rinsed)
  • 4 slices seeded bread (or baguette)
  • 4 ounces european style butter (softened)
  • flaky sea salt (such as Maldon)

    Directions

    1. Thinly slice radishes, preferably with a mandoline or fine blade of a food processor. Place in a bowl of ice water while you prepare the toast.
    2. Lightly toast bread according to your favorite method, let cool slightly, and top with a generous spread of butter (toast should be cool enough that butter won't melt). Arrange overlapping layers of sliced radishes over toasts and sprinkle each with a scant pinch of sea salt.
