A cold soup for those hot days, this gazpacho is made with fresh peas, mint, and sour cream for a refreshing flavor. Ready in less than an hour, your tastebuds will thank you for this vegetarian delight.

Ingredients

  • 500 grams peas (fresh or frozen)
  • 1/2 bunch fresh mint
  • 1 liter organic vegetable broth
  • 1 tablespoon sour cream
  • 2 tablespoons hazelnut oil (olive oil)
  • hemp seed
  • pepper

Directions

  1. In a saucepan of boiling water, blanch the peas 1-2 minutes. Drain.
  2. Meanwhile, heat the vegetable broth.
  3. Mix the peas and mint leaves together, add broth to desired consistency.
  4. Add olive oil and pepper.
  5. Allow to cool in the refrigerator for at least 1/2 hour, and hour is better.
  6. Before serving, add a drizzle of cream and a tablespoon of hemp seed.

We loved the color of this gazpacho! I'm not too fond of mint but it blended well with the fresh peas in color and taste. I added a dollop of sour cream on top and sprinkled with snipped chives.
