Fresh Peas and Mint Green Gazpacho

Description

A cold soup for those hot days, this gazpacho is made with fresh peas, mint, and sour cream for a refreshing flavor. Ready in less than an hour, your tastebuds will thank you for this vegetarian delight.

Ingredients

500 grams peas (fresh or frozen)
1/2 bunch fresh mint
1 liter organic vegetable broth
1 tablespoon sour cream
2 tablespoons hazelnut oil (olive oil)
hemp seeds
pepper

Directions

1In a saucepan of boiling water, blanch the peas 1-2 minutes. Drain.
2Meanwhile, heat the vegetable broth.
3Mix the peas and mint leaves together, add broth to desired consistency.
4Add olive oil and pepper.
5Allow to cool in the refrigerator for at least 1/2 hour, and hour is better.
6Before serving, add a drizzle of cream and a tablespoon of hemp seed.
