This is the kind of easy does it recipe that will beckon you back to the kitchen every day so long as fresh figs are in season and in good supply, as that is an all too brief period of time. The open-face sandwich couldn't be simpler, too, and yet it is somehow sublime, the pairing of sweet fig with sharp cheese, peppery arugula, and tart vinegar, all layered atop your favorite bread (trimmed of crusts if entertaining).
- 1 piece fresh cheese
- 1 figs
- 2 slices bread
- arugula (to taste)
- sesame seeds (to taste)
- raspberry vinegar
- Layer the ingredients on one slice of bread.
- Sprinkle with the raspberry vinegar and sesame seeds.
- Top with second slice of bread. Serve.
