This French-style potato salad makes for a great dish to serve at a cookout. The potatoes are cooked then cooled before being dressed in a delicate dressing. The dressing is made of red wine vinegar, parsley, and mixed provencal herbs making for a flavorful bite each time. There has been lots of different potato salad recipes flowing through my hands until I found this one. This potato salad is nothing like the kinds I have made before. It is thick and creamy with large chunks of everything I love. None of the ingredients overpower the other, giving a perfect blend of flavors. I will only be making this 5 star potato salad from not on.
