French Chicken


This indulgent dish is perfect for entertaining. It's richness is courtesy of bechamel sauce, here flavored with ketchup (for extra flavor but also color), and which is what bind together the layers: toasted bread, sauteed chicken and chicken (or turkey) sausages, chorizo, ham, and cheese as the topping. What's great about this recipe, besides all that, is that it calls for heating the assembled dish in the microwave to melt the cheese.


  • 2 chicken breasts
  • olive oil
  • salt
  • ground black pepper
  • 4 sausages (canned poultry)
  • 6 slices whole wheat bread (without crust)
  • 1 tablespoon margarine
  • 1 tablespoon flour
  • 1/2 cup skim milk
  • 4 tablespoons ketchup
  • salt
  • ground black pepper
  • 8 slices Flemish cheese
  • 4 slices chorizo
  • 2 slices deli ham
  • dried oregano


  1. 1Season the chicken with salt and pepper.
  2. 2Heat oil in a frying pan and cook chicken on both sides until golden.
  3. 3Remove from pan and set aside on a plate lined with paper towels to absorb excess grease.
  4. 4In the same frying pan, sauté sausages - sliced in 3 pieces lengthwise - and set aside.
  5. 5Toast bread slices.
  6. 6For the béchamel sauce, melt margarine in a saucepan, add flour, mix and brown lightly.
  7. 7With a whisk, stir in milk and bring mixture to a boil, stirring constantly.
  8. 8Once the sauce begins to thicken, remove from heat and season with salt and pepper.
  9. 9Stir in ketchup, mix well and set aside.
  10. 10Arrange the layers as follows: bread, chicken, sausage, bread, chorizo, ham, bread.
  11. 11Cover all the layers with the slices of cheese, including the sides. Drizzle with béchamel sauce.
  12. 12Briefly heat in microwave or preheated oven broiler to melt the cheese.
  13. 13Sprinkle with dried oregano.
  14. 14Serve warm.
