All you need is clove — and coconut milk-infused black bean purée garnished with granulated cassava. This sweet purple frejon plays well with spicy deep-fried fish that's browned to perfection.

  • 2 cups coconut milk (use more or less to achieve desired consistency)
  • 2/3 cup sugar
  • 3 pinches kosher salt (for frejon)

  • 1 pinch garlic powder (for frejon)
  • neutral-flavored cooking oil (such as peanut, vegetable, canola, safflower, or corn, for frying)
