Ingredients

  • 2 tablespoons olive oil
  • 8 sausages ('Lil Smokies or Vienna)
  • 1 onion (small, chopped)
  • 3 tomatoes (cut into wedges)
  • 7 ounces kidney beans (drained)
  • 14 ounces borlotti beans (drained)
  • 16 ounces tomato pasta sauce
  • chopped parsley (Fresh, to garnish)

Directions

  1. Heat 1 tbsp olive oil in a large pan and cook sausages for 6 minutes. Remove from pan.
  2. Add another 1 tbsp oil add the onion, and cook for 3 minutes. Then add tomatoes, and cook for a further 3 minutes. Finally add kidney beans, borlotti beans, and tomato pasta sauce. Season. Bring to boil, then simmer for 10 minutes.
  3. Return sausages to pan and cook for 5 minutes until piping hot. Garnish with fresh chopped parsley.
