Ingredients

  • 20 grams yeast
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • 300 milliliters warm water
  • 500 grams flour
  • olive oil
  • 1 package feta cheese (diced)
  • 1 red onion (medium sized chunks)
  • 3 sprigs rosemary

Directions

  1. 1In mixer bowl, mix with a fork the yeast, salt, sugar, and half of the water.
  2. 2Add the flour and knead for 7 to 9 minutes to get a good soft dough. Add more water if needed.
  3. 3Cover with plastic wrap, and let rise for 30 minutes, or until it doubles in size.
  4. 4Spread the dough on a floured surface into a rectangle 2 1/2 centimeters thick. Place on a baking sheet line with parchment paper.
  5. 5Pour 2/3 tablespoon of olive oil on the dough, and spread it with the back of the spoon.
  6. 6Sprinkle the feta cheese, onion and rosemary on top of the dough. Gentle press the toppings into the dough.
  7. 7Let double in volume.
  8. 8Preheat oven to 180 degrees Celsius and bake for about 25 minutes.
  9. 9Serve warm.
