Description

This cake puts its own twist on the classic citrus cake. Made with fresh tangerine juice and tangerine zest, this light and fluffy cake topped with the slight crunch of almonds is a must make.

Ingredients

  • 8 egg whites
  • salt
  • 125 grams butter
  • 220 grams sugar
  • 125 grams flour
  • 1 teaspoon baking powder
  • 2 tangerine (juice)
  • 1 tangerine zest
  • sliced almonds
  • powdered sugar

Directions

  1. 1Preheat oven to 180 degrees Celsius.
  2. 2Whisk the egg whites with a pinch of salt to stiff peaks. Set aside.
  3. 3Beat the butter and sugar to a soft, white dough. Add the flour, baking powder, tangerine zest, and juice. Beat well.
  4. 4Add two tablespoons of the beaten egg whites, and gently mix, to loosen the dough. Add the remaining beaten egg whites, and use a spoon to gently mix upwards, without beating.
  5. 5Place the dough in a greased and floured bundt pan. Sprinkle with almond flakes and powdered sugar.
  6. 6Bake for about 30 minutes.
