Ingredients

  • 3 eggs
  • 120 grams ricotta cheese
  • 150 grams melted butter
  • 5 tablespoons cold milk
  • 150 grams flour
  • 1 teaspoon baking powder
  • 150 grams sugar
  • 40 grams ground almonds

Directions

  1. 1Mix the ricotta with the milk.
  2. 2Beat the eggs with the sugar, add the flour, yeast, almonds, ricotta and melted butter and mix.
  3. 3Set aside for at least 1 hour in the refrigerator.
  4. 4Preheat oven to 270C.
  5. 5Fill molds 2/3 with madeleines or cakes.
  6. 6Bake for 4 minutes, lower the heat to 210C, and bake for 6 minutes until the madeleines are gilded.
  7. 7Wait a few moments before you unmold.
