Turned out meh. A few things MIGHT improve this: 1. maybe whip the whites to soft peaks? Not sure if that would work with only 3 eggs as there's a LOT of dry to mix in. 2. powdered sugar should be measured by weight. The weight of a cup of powder can vary greatly if it's compacted from settling versus sifted - the instructions don't specify sifting? 3. what kind of cocoa powder? Natural & dutch processed give very different flavours & heaven help the person who uses hot chocolate mix in a pinch. Per the website, this recipe was adapted from a King Aurthur recipe? One can't just omit flour or swap flour for powdered sugar. First my egg whites just stayed globbed in the center of my dry goods despite furious whisking (probably had too much sugar). Added a yolk as an emulsifier, had to add more sugar so ended up runny as cream. Admitted defeat & added about 3/4c flour. All that fuss and left with very bitter (despite all the sugar) cookies that actually stuck to the parchment paper. Meh.

cookies were quite flat but gooeyness was there. Also, suprisingly not as sweet as I thought it would be.

These were just ok. I'm not sure what magic oven the author used, but the cookies turn out SUPER FLAT. Six cookies spread out and covered almost the entire cookie sheet! After the first batch, I tried refrigerating the batter for a while to see if it was less runny and kept the cookies from becoming giant pancakes. It kind of worked. I liked the taste, but I won't make them again.

Turned out really well! I would not recommend serving them to kids as they aren't very sweet (because of cacao powder). I loved them and they were very easy to make with the end result very gooey. Also, this recipe only makes one sheet (though it says it makes 2. I would make them again.

Wonderful! Made them awhile ago and now I'm making them again today. I left out the expresso since I don't like coffee and they still tasted yummy!
