It’s dipping time! These crackers go well with any soup, but especially tomato and other soups that have a bite. The thyme and parmesan cheese deliver a mild, yet bold flavor that will have you craving more.

Ingredients

  • 150 grams butter (soft)
  • 150 grams grated parmesan cheese (very cool)
  • 150 grams flour
  • 1 egg
  • fleur de sel
  • fresh thyme

Directions

  1. Mix the softened butter, Parmesan cheese, and flour in a medium-sized bowl.
  2. Add the egg and stir with a spatula to form a smooth paste.
  3. Roll out a rectangle of dough.
  4. Cover with plastic wrap and refrigerate for 30 minutes.
  5. Preheat oven to 180 degrees Celsius.
  6. Roll out the dough directly on parchment paper, until 3 millimeters thick.
  7. With a knife or pizza cutter, cut the dough into rectangles.
  8. Mix the fleur de sel and the thyme, then sprinkle on the crackers.
  9. Bake for 15 minutes. Allow to cool before separating.

I baked these and when I pulled them out of the oven I slid the parchment paper directly to cooling racks and let them sit for about an hour before breaking them apart. Very good crackers.
