Ingredients

  • 1/4 cup olive oil
  • 2 tablespoons soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 lemon
  • cumin
  • 4 ounces flank steak
  • 1 onion (peeled, sliced)
  • 1 green bell pepper (seeded and sliced)

Directions

  1. Add the olive oil, soy sauce, garlic powder, onion powder, lemon juice, and pinch of cumin to a bowl. Mix well and set aside.
  2. Place the flank steak in a large bowl and pour a small amount of the marinade onto it.
  3. In another bowl, pour the rest of the dressing on the bell pepper and onion and toss well. Allow the meat and vegetables to marinate for at least 30 minutes.
  4. Drain the marinade and grill the meat, onions and peppers.
  5. Serve everything on flour tortillas.

We served these sizzling hot with extra grilled onions and peppers. We also experimented with different peppers for heat and flavor. In addition, we topped these with slices of avocado or a generous dollop of guacamole.
