Ingredients

  • 1 teaspoon olive oil
  • 1/2 onion (peeled and minced)
  • 1 red bell pepper (seeded and diced)
  • 1 chayote squash (chopped)
  • 15 ounces diced tomatoes (roasted)
  • 1 liter water
  • salt
  • ground black pepper
  • 2 zucchinis (chopped)

Directions

  1. Place a large pot on the stove and pour in the olive oil. Add the onion and bell pepper and cook for 5 minutes or until the onion becomes transparent.
  2. Add the squash, tomatoes, and water. cover the pot and cook at medium heat for 15 minutes.
  3. Add a pinch of salt and black pepper and the zucchini. Cook for another 5 minutes. Serve hot.

This soup doesn't take too many ingredients to it, and it is easy to make. It could be served with some buttery crackers topped with prosciutto and cream cheese.
