Description
Fish with just the right amount of zing. When you’re in the mood for fish with a twist, this recipe delivers! Cod covered in a batter made from Dijon mustard, Greek yogurt, curry powder, and lemon juice. Carrots and pickles add a lively sense of color to give this dish great visual appeal.

- Cut the cod into large cubes. pour it into the bowl of a food processor along with the egg, cornstarch, mustard, half and half, and lemon zest, mix to obtain a homogeneous filling, add the chopped dill lastly (if you mix it in, your croquettes will be a bit green ) pur salt and pepper. You may also use the bowl of your blender.
- Heat a pan with the butter and place the croquettes. You may do it with a tablespoon or use small pastry circles that you place in the pan to give a more rounded shape to your croquettes. Cook over low heat so that they become nicely browned, then gently flip them over.
- Peel and grate the carrots and mix with the chopped pickles.
