Fish and Vegetable Stir-Fry

Ingredients

  • 9 ounces rice noodles (fresh, or noodles of choice)
  • 2 teaspoons vegetable oil
  • 1 2/3 pounds white fish fillets (firm, cut into 2-inch pieces)
  • 7 ounces snow peas (trimmed and diagonally sliced)
  • 1 bunch baby bok choy (quartered)
  • 1 bunch broccolini (sliced)
  • 4 green onions (sliced)
  • 1/4 cup lite soy sauce
  • 2 tablespoons sweet chili sauce
  • cilantro leaves (to serve)

Directions

  1. Cook noodles according to package directions. Drain well.
  2. Heat oil in a wok or large skillet on high heat. Stir-fry fish in 2 batches, for 2-3 mins until cooked through. Transfer to a plate. Add snow peas, bok choy, broccolini and onions to the wok; stir-fry for 3-5 mins, until tender.
  3. Add noodles, fish, soy sauce and chili sauce to wok; stir-fry until heated through. Serve topped with cilantro.
