Fish Skewers with Lime, Ginger and Arugula

Ingredients

  • 1 1/2 pounds white fish fillets (cut into 1-inch chunks)
  • 1 tablespoon sesame oil
  • 1 lime peel (finely grated and lime juiced)
  • 3 limes (cut into wedges)
  • 2 ounces arugula leaves
  • 2 tablespoons pickled ginger (thinly sliced)
  • 1 tablespoon pickling liquid (ginger)
  • 2 tablespoons kecap manis (thick sweet soy sauce)

Directions

  1. Heat a grill pan on medium-high heat or preheat the grill to medium. Combine fish, oil, and lime peel and juice in large bowl. Thread 3 pieces of fish and a lime wedge onto each of 12 skewers. Season.
  2. Char-grill or grill until fish is cooked through, turning.
  3. Combine arugula, ginger, ginger liquid and kecap manis in bowl. Season to taste. Serve with fish skewers.
