Description

Featuring fresh tomatoes and garlic, this hearty rice dish incorporates a seafood element that gives it a unique twist. This recipe calls for fresh hake, but can also be made with your favorite white fish.

Ingredients

olive oil (to taste)
1 onions (medium, chopped)
3 garlic cloves (chopped)
1 tomatoes (ripe, chopped)
2 tablespoons tomato paste
4 merluza (medallions)
salt (to taste)
rice (for 4 people)
coriander (sprigs)

Directions

1Heat a large saucepan with olive oil, add the onion and garlic, and cook until onion is translucent.
2Add the chopped tomatoes, and tomato paste, and cook until boiling.
3Add hake medallions with two cups of water, season with salt, and cook on on medium heat.
4Once the fish is cooked, remove it with a skimmer, and place on a platter.
5Add the rice to the boiling water. Adjust the seasoning, and bring to a boil. Once boiling, lower heat and cover.
6Meanwhile, remove skin and bones from the fish, and break it up into medium-sized pieces.
7When the rice is almost cooked, add the fish, mix, and serve immediately.
8Sprinkle with chopped coriander.
