  • 28 ounces sole fillet (sliced on the bias into 4 slices each, with bones and head reserved)
  • 4 bulbs shallots (finely chopped, trimmings reserved)
  • 1 green pepper (each red and, diced, trimmings, except seeds reserved)
  • 1 cup mushrooms (thinly sliced)
  • 1 lemon (juiced, divided)
  • 7 inches seeds
  • 1 eggplant
  • 1/2 cup clarified butter
  • 1 cup long-grain rice
  • 1 bay leaf
  • salt (Freshly ground, to taste)
  • freshly ground pepper (to taste)
  • 1/4 cup dry white wine
  • 1/2 cup heavy whipping cream
  • 4 cups veal stock (reduced to 1/4 cup, recipe follows)
  • 1 tablespoon unsalted butter
  • 1 egg yolks
  • 1 tablespoon chives (finely chopped, plus extra for garnish)
