Description

A parfait to eat with your meal. This lightly sweetened taste of the Mediterranean features honey, figs, vinegar, and mozzarella cheese. Serve with lamb dishes to complete the ambiance.

Ingredients

  • 6 figs (fresh)
  • 1 1/2 mozzarella cheese (ball of, di buffala)
  • fresh basil leaves (chopped)
  • 20 grams pinenuts
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • salt (to taste)
  • pepper (to taste)

Directions

  1. Wash the figs and cut them into cubes.
  2. Cut the mozzarella into cubes.
  3. In a dessert glass, place a layer of mozzarella, add a little bit of chopped basil, fig cubes, then repeat the layers with mozzarella, then figs.
  4. Toast pine nuts in a pan, and add them to the glass.
  5. In a small bowl, combine olive oil, balsamic vinegar, honey and salt and pepper, to make a vinaigrette.
  6. Divide into each glass.
  7. Chill until serving.
