Fig and Prosciutto Bruschetta

Ingredients

  • 2 tablespoons olive oil
  • 6 slices french bread
  • 3 tablespoons herb cheese spread
  • 6 leaves baby arugula (or basil)
  • 3 slices prosciutto (halved lengthwise)
  • 3 figs (fresh, sliced into quarters or thin slices)

Directions

  1. In a large frying pan, heat olive oil over medium-high heat. Toast bread until browned on each side. Let cool.
  2. Spread cheese over 1 side of each slice of bread. Top each with 1 piece of arugula. Shape each 1/2 slice of prosciutto into a rosette and place on arugula. Arrange figs over top. Season.
