  • 2 chicken sausages (spicy, I recommend these, diced)
  • 1 bell pepper (large, diced, I used a mix of red and yellow peppers because that’s what I had on hand, but any color will do.)
  • 1/2 Spanish onion (minced)
  • 2 cloves garlic (minced)
  • 14 1/2 ounces black beans (drained and rinsed)
  • 28 ounces fire roasted tomatoes (crushed, Yes, you can use regular crushed tomatoes if you can’t find fire roasted. Duh.)
  • 1 1/2 chipotle peppers (canned in adobo, minced)
  • 1 1/4 teaspoons ground cumin
  • 3/4 teaspoon paprika
  • 3/4 teaspoon dried oregano
  • 5 large eggs
  • 1/4 cup cotija cheese (crumbled)
  • 2 tablespoons fresh cilantro
