Fettuccine with Broccoli, Sweet Corn and Lime is a bold and flavorful dish for any night of the week. It takes only 20 minutes to make and is only 50 calories per serving. Feel free to have seconds or pair it with your favorite meat dish. This recipe combines fettuccine or any other favorite pasta, with hearty vegetables for a decadent dish. This dish will guarantee to be a family favorite.

Ingredients

  • 1 package fettuccine (multi-colored vegetable, may substitute other pasta)
  • 2 cups frozen broccoli (cut into pieces)
  • 1/2 cup sweet corn (yellow)
  • 3 tablespoons cream
  • 1 tablespoon milk
  • 1 tablespoon salt
  • 1 lime

Directions

  1. Heat three cups of water in a pan and add the pasta with 1/2 tsp. salt when it starts to boil. When it starts to boil again, add the broccoli.
  2. When the pasta is al dente drain the contents of the pan, reserving 1/2 cup of the water.
  3. Return the pasta and broccoli to the pan, adding the corn, cream, milk, salt and lime juice. Mix well and add the reserved water if needed.

Great way to add veggies to fettuccine and get great flavor. The lime brings the right amount of zest to the dish. I used half and half to make it a bit healthier, but the cream works just fine as well. Great consistency throughout the dish. Loved the different textures and flavors. It makes for a great vegetarian dinner or a heavier side.
