Ingredients

1 sprig mint
60 grams pinenuts
30 grams grated parmesan cheese
250 grams olive oil
60 grams frozen peas (cooked)
20 mint leaves
coarse salt
8 slices sourdough (French, or round loaf bread)
1 package feta cheese

Directions

1For the pesto, put the mint, pine nuts, and grated Parmesan in the blender. Gradually add oil, and mix. Season with a little salt if necessary. Store in the refrigerator.
2On 4 slices of bread generously spread some feta cheese, add peas (about 1 tablespoon per sandwich), cover with a little bit of feta, and a few mint leaves. Season with pepper and cover with a second slice of bread. Roast the sandwiches for 4 or 5 minutes.
3Serve hot garnished with mint pesto.
