It only takes 30 minutes to prepare and has a mere 150 calories per serving. Fer’s Mexican Breakfast combines everything you would ever want in a delicious and spicy breakfast: hearty vegetables and meats with savory spices. We hope you enjoy this recipe as much as we do.

Ingredients

  • 4 egg whites
  • 2 egg yolks
  • 1 stalk celery (diced)
  • 1 tomato (diced)
  • 1/4 onion (diced)
  • 1/2 cup black beans (whole, in their broth)
  • 3 slices turkey ham (cubed)
  • salt (and pepper)

Directions

  1. Brown the turkey ham slightly, for 2 minutes, in a skillet with a tsp. of vegetable oil. Add the onion and saute for 1 minute on medium heat, then add the celery, tomato and onion. Cook for 5 more minutes.
  2. Mix the eggs in a separate bowl with a fork with salt and pepper and add them to the vegetables.
  3. Add the beans and little more salt to taste and carefully mix in wide strokes so that the eggs remain fluffy.
  4. Serve with flour tortillas and spicy salsa verde.

A nice way to start off your day with a little Mexican food twist. The ingredients actually work surprisingly well together for a breakfast dish. I was worried about the beans, but we loved them mixed in the eggs. These were fabulous as wraps with some salsa.
